Recipe: Banana, apple, walnut bread

SERVES:
approx. 12 - 16 slices

INGREDIENTS:

2 medium size, very ripe bananas
1/2 lightly packed cup light brown sugar
2 large eggs
2 Tbs vegetable oil
1/2 cup unsweetened applesauce
1/3 cup plain non fat yogurt

1 1/2 cups all-purpose flour (see hints below)
1/2 cup whole wheat flour
1/2 cup chopped walnuts
1 tsp baking soda
1/2 tsp kosher salt (or 1/4 tsp table salt)

PROCEDURE:

Preheat the oven to 350 degrees and lightly oil and flour one 9 x 5-inch loaf pan.

Add one lightly packed 1/2 cup light brown sugar to two ripe medium sized bananas, in a mixing bowl, and use a fork to mash them up completely.

Then add 2 large eggs, 2 Tbs vegetable oil, 1/2 cup unsweetened applesauce, 1/3 cup non fat plain yogurt and mix that up.

Then add 1 1/2 cups all-purpose flour, 1/2 cup whole wheat flour, 1/2 cup chopped walnuts, 1 tsp baking soda and 1/2 tsp kosher salt.

Mix everything together, transfer it to the floured loaf pan and place it onto the center rack of the preheated oven.

That will take just about an hour to bake and you'll want to use a toothpick to check it for doneness.

Let it cool down for 5 to 10 minutes in the pan and then carefully turn it out onto a cooling rack to finish cooling down. (see hints below)


HINTS:

Gently run a knife around the edge of the loaf pan before inverting and turning the bread onto the cooling rack.

Sift flours, baking soda and salt together before adding to the wet ingredients.
