Oat Bran and Raisin Muffins

SERVES:
12 muffins

INGREDIENTS:

  • 2 1/2 cups oat bran cereal

  • 1/2 cup raisins (golden or regular)

  • 1 1/2 cups milk

  • 2 cups all-purpose flour

  • 1/2 cup dark brown sugar

  • 1 Tbs baking powder

  • 1/2 tsp salt

  • 1/2 tsp ground cinnamon

  • 2 large eggs

  • 1/2 cup vegetable oil

  • Butter or oil for greasing 12-cup muffin pan


PROCEDURE:

Preheat the oven to 400 degrees and use a large mixing bowl to combine 2 1/2 cups oat bran cereal and 1/2 cup raisins with 1 1/2 cups of milk to start softening up the cereal.

Let that go for 5 minutes or so and, while that's happening, use another mixing bowl to combine 2 cups all-purpose flour with 1/2 cup dark brown sugar, 1 Tbs baking powder, 1/2 tsp salt and 1/2 tsp ground cinnamon and mix it up.

Make sure to break up all the lumps of dark brown sugar and then add 2 eggs to the cereal mixture...as well as 1/2 cup of vegetable oil...stir that in and then fold the dry ingredients into that.

Divide the batter into a well buttered, or paper cup lined 12-cup muffin pan and place that on the center rack of the preheated oven.

They'll take about 20-25 minutes to bake…..just use a toothpick test to check for doneness.


HINTS:

Substitute 3 cups of regular raisin bran instead of the oat bran and raisin combination.
