Recipe: Apple, Date Nut Bread

SERVES:
Makes 2 loaves
INGREDIENTS:
- 2 sticks unsalted butter, room temperature
- 1/2 cup light brown sugar
- 2 cups grated apple
- 4 large eggs
- 1/2 cup milk
- 4 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup chopped pitted dates
- 1 cup chopped walnuts
- 2 9x5-inch loaf pans, buttered and lightly floured
PROCEDURE:
Use an electric mixer or a large mixing bowl and rubber spatula to cream 2 sticks of room temperature, unsalted butter with 1 1/2 cups of light brown sugar.
Then grate 2 cups of apples and add those to the mixing bowl with 4 large eggs and 1/2 cup of milk and mix it until everything is well combined.
Top that with 4 cups of all-purpose flour, 1 tsp of baking soda and 1 tsp of salt, mix that together and finish by folding in 1 cup of chopped dates and 1 cup of chopped walnuts.
Divide the batter into the two 9x5-inch buttered and floured loaf pans and place those on the center rack of a preheated 350 degree oven.
They'll take just about 1 hour to bake and it's a good idea to rotate them from one side to the other at some point.
Use a toothpick test to check them for doneness and then, after five minutes or so, turn them out onto a cooling rack to cool down.
HINTS:
Slice and serve it while it's still a little warm with butter or as a dessert with a scoop of vanilla ice cream on top. You can use sugared, chopped dates for this but, to keep the sweetness down, I prefer to chop unsweetened dates. This recipe is easy to cut in half to make only one loaf instead of two.
