SERVES:
1 9 x 13-inch baking dish
INGREDIENTS:
- 1 1/2 sticks unsalted butter, melted
- 1 1/2 cups dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- Pinch salt
- 1/2 cup butterscotch chips
Butter and flour for preparing 9 x 13-inch baking dish
PROCEDURE:
Preheat the oven to 350 degrees and also lightly butter and flour one 9 x 13-inch baking dish.
While the oven is coming up to temperature, use a small pot to melt 1 1/2 sticks unsalted butter and then add 1 1/2 cups dark brown sugar, stir that in until the sugar is dissolved and take it off of the heat.
Let that cool down to room temperature before continuing to assemble the recipe and it’s a good idea to add that mixture to a large mixing bowl so it spreads out and cools down a little faster
Get the dry ingredients together in another mixing bowl by combining 1 1/2 cups all-purpose flour, 3/4 tsp baking powder, 1/4 tsp baking soda, add a pinch of salt to that and whisk it up.
Once the butter and sugar mixture has cooled down, add 2 large beaten eggs and 1 1/2 tsp vanilla extract, mix that together and then fold the dry ingredients into that until everything is just combined.
At this point, fold in 1/2 cup butterscotch chips and then transfer that batter to the prepared baking dish and place that on the center rack of the preheated oven.
It will take just about 20 minutes to bake and it's a good idea to spin the baking dish around once while it's in there, just use a toothpick test to check it for doneness.
Let it cool down in the pan and then cut it into squares and they're good to go!
HINTS:
These treats are super rich and sweet so small squares are the way to go when cutting them. Try adding some semi sweet chocolate chips and or chopped nuts for added flavor and texture.
