Recipe: Strawberry Skillet Cake with Chocolate Chips and Whipped Cream

Serves 4 INGREDIENTS:
2 Tbs butter
3/4 cup all-purpose flour
3 large eggs
3/4 cup milk
for the topping:
2-3 cups sliced strawberries
chocolate chips
whipped cream
PROCEDURE:
Plan ahead and make sure your oven is ready to go at 400 degrees and then melt a couple of Tbs of butter in a 10-12 inch cast iron skillet, or other oven proof pan, on medium heat, on the stovetop.
While the butter is melting, combine 3/4 cup all-purpose flour with 3 large eggs and 3/4 cup milk and whisk that up. When the pan is nice and hot and the butter has melted, add the batter to the pan and place that on the center rack of the preheated oven. The cake is going to take about 20 minutes to bake and, while that's happening, you should have plenty of time to slice a couple of cups of strawberries.
Chances are it's going to puff up quite a bit as it's baking and you can use a knife to release a little steam or it's going to deflate as it cools anyway.
Then you can serve it family style with the strawberries right in the middle of the skillet or on individual plates if you like. Put some strawberries on top with some chocolate chips and finish with some whipped cream.
HINTS:
Serve with other types of fresh fruit or with a squeeze of lemon juice and powdered sugar. This makes a great brunch item but also works as a simple dessert.
