Recipe: Apple Crisp

SERVES:
1 9 x 13-inch baking dish

INGREDIENTS:

  • 3 pounds baking apples (Empire or Granny Smith are good)

  • Juice of 1 lemon (optional)

  • 1/4 cup all-purpose flour

  • 1/2 cup light brown sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp ground ginger

  • 1 cup quick cooking oatmeal

  • 1 cup all-purpose flour

  • 1 cup light brown sugar

  • 1 stick, cold unsalted butter, cut into small cubes

PROCEDURE:

Preheat the oven to 350 degrees.

Use a mixing bowl to combine 1 cup quick cooking oats, 1 cup all-purpose flour and 1 cup light brown sugar then add 1 stick cold, cubed unsalted butter and use your fingers to completely incorporate the butter.

Next, grab a larger mixing bowl and squeeze the juice of one lemon, through a mesh strainer, into that.

Peel and core 3-4 apples at a time and cut them into small, equal sized 1/4-inch thick slices, add them to the bowl and toss them around in the lemon juice as you go.

As soon as all the sliced apples are in the bowl, add 1/4 cup all-purpose flour, 1/2 cup light brown sugar, 1/2 tsp ground cinnamon and 1/4 tsp ground ginger and toss everything to coat.

Place that mixture into a 9 x 13-inch baking dish and top it evenly with the crisp topping and place it on the center rack of the preheated oven.

That will take just about 45 minutes to bake and it will be a nice golden brown on top and bubbling along the sides when it is done.

HINTS:

Serve with vanilla ice cream or plain yogurt.
