Recipe: Irish Soda Bread

SERVES:
1 loaf
INGREDIENTS:
- 1 cup whole wheat flour
- 2 cups all-purpose flour
- 3 Tbs light brown sugar
- 1/4 cup rolled oats
- 1 tsp baking soda
- 1 tsp kosher salt (or 1/2 tsp table salt)
- 1/3 cup golden raisins
- 1 1/2 cups buttermilk
PROCEDURE:
Preheat oven to 350 degrees.
Add 1 cup of whole wheat flour to a large mixing bowl with 2 cups of all-purpose flour, 3 Tbs light brown sugar, 1/4 cup rolled oats, 1 tsp baking soda, 1 tsp kosher salt and 1/3 cup golden raisins and mix to combine.
Next, add 1 1/2 cups buttermilk, fold together and gently knead until it forms a ball.
Place that loaf on a heavy bottomed baking tray and use a knife to cut a 1/2-inch deep cross into the top of the bread and then place the baking tray onto the center rack of the preheated oven.
That will take just about 50 - 55 minutes to bake and you'll want to spin the tray part way around once or twice while it is in there.
It will be golden brown on the outside and have a nice hollow thumping sound when it is done.
HINTS:
Use 3 cups of all-purpose flour instead of 1 whole wheat and 2 all-purpose. You don't want to over work the dough but it is a good idea to knead it for a minute or so before placing on the baking tray. Use two lighter weight baking trays stacked together if you don't have a heavy bottomed baking tray….you don't want the bottom of the bread to burn.
