Recipe: Pita Pizza with Ham, Spinach, Pineapple and Mozzarella Cheese

INGREDIENTS:
- 4 flatbread pita shells
- 1 large clove garlic, minced
- Approx. 1/3 cup olive oil
- Approx. 2 cups julienned deli ham
- Approx. 2 cups grated mozzarella cheese
- Approx. 4 cups loosely packed baby spinach
- Approx. 1 cup diced canned pineapple
- Red pepper flakes to taste
PROCEDURE:
Preheat the oven to 400 degrees and place a heavy bottomed baking tray on the center rack so that it is nice and hot when you put the pizzas in and the bottom of the pita bread crisps up nicely.
Brush the top surface of each pita bread with some of the minced garlic-olive oil blend and then top that with some grated mozzarella cheese, some thinly sliced smoked deli ham. Top that with a little handful of baby spinach and some diced pineapple. Add a little more grated cheese and an optional pinch of red pepper flakes if you like a little heat.
Once the oven has come up to temperature, carefully place each pita pizza onto the hot baking tray.
They probably won't take more than 10 minutes to bake and the bottom crust should be a nice golden brown by then as well. Cut into quarters for easy party appetizer portions.
HINTS:
This same technique works with other ready to go foods like pepperoni, roasted red peppers etc.
