Recipe: Buttermilk Biscuits with Green Onions

SERVES:
Makes 12-15 biscuits
INGREDIENTS:
- 4 cups all-purpose flour
- 2 Tbs baking powder
- 2 Tbs sugar
- 1 tsp salt
- 1/3-1/2 cups chopped green onions (optional)
- 6 Tbs unsalted butter, cubed
- 1 1/2 cups buttermilk
PROCEDURE:
Preheat the oven to 400 degrees and use a large mixing bowl to combine 4 cups of all-purpose flour with 2 Tbs of baking powder, 2 Tbs sugar, 1 tsp salt and an optional 1/3-1/2 cup chopped green onions and mix those together.
Next, add 6 Tbs of cubed butter and use your fingers to incorporate that. Add 1 1/2 cups buttermilk and mix everything together until it just forms a ball and then roll the dough out on a floured work surface until it is about 1 1/2 inches thick.
Use a knife to cut the dough into squares or use a round biscuit cutter and place those on a heavy bottomed baking tray. Reshape the remaining dough and cut that into biscuits as well.
Pop the tray onto the center rack of the preheated oven.
They'll take just about 14-15 minutes to bake and I would suggest eating them while they're still nice and hot with a dollop of butter!
HINTS:
You can add a tsp of lemon juice or even white vinegar to regular milk if you don't have buttermilk.
