Recipe: Baked Eggs with Italian Sausage, Zucchini and Marinara

SERVES:
1-2
INGREDIENTS:
- 1 link Italian Sausage, crumbled
- 1 clove garlic, minced
- 1/2 small onion, diced
- Olive oil for sauteing onions
- 1/2 small zucchini, thinly sliced
- Approx. 1 cup marinara (plus 2-3 Tbs water)
- 2 large eggs (or 4 to serve two people)
- Grated Parmesan cheese for garnish
- Country toast
PROCEDURE:
Add a splash of olive oil to a medium sized nonstick pan and saute the onion until it just starts to soften up.
Add the garlic and Italian sausage and let that go for a minute and then add the zucchini.
At this point you'll want to stir it around as it is cooking a let the zucchini soften up quite a bit.
When you're happy with that, add just enough marinara sauce to almost cover everything add a little splash of water to that and bring it up to a simmer.
Crack 2 large eggs into a bowl and add those to the top of the marinara, adjust the heat so that it is just simmering along and put a lid on top.
At this point go ahead and toast some country bread if you are using it and then, once the eggs are cooked to your liking, it is time to eat.
Loosen up the outside edges a bit making sure it is loose in the pan and then very carefully slide it out onto a plate, sprinkle a little Parmesan cheese over the top and place the country toast on the side.
HINTS:
In reality, you could probably crack 4 eggs into the pan and serve 2 people it just depends on how hungry you are. It can be a challenge sliding the eggs out of the pan at the end, just make sure there is a little layer of olive oil in the pan before adding the marinara.
