Recipe: Roasted Sweet Potato and Broccoli Pizza

SERVES:
Makes one 12 X 18 inch pizza

INGREDIENTS:

Approx. 1 1/2 pounds pizza dough
1 medium sweet potato, peeled, quartered lengthwise and cut into 1/4-1/2 inch thick slices (approx. 2 cups total)
2 cups small broccoli florets
Olive oil
Salt and pepper
1 medium onion, peeled, quartered and sliced
2 cloves garlic, peeled and minced

Red pepper flakes to taste (optional)
Grated parmesan cheese as needed (approx. 1/2 cup)

PROCEDURE:

Preheat the oven to 400 degrees and, while that's coming up to temperature, peel, quarter and cut about 2 cups of sweet potatoes into 1/4 - 1/2 inch thick slices and also cut about 2 cups broccoli into small florets.

Toss each if those separately with olive oil and salt and pepper and lay them out side by side on a baking tray and place the tray into the oven to par cook.

And while your keeping eye on those and letting them soften up a bit, add a splash of olive oil to a large saute pan on the stove top and saute 1 medium sliced onion and 2 minced cloves of garlic to soften.

Roll the dough out on a floured surface, or use your hands to stretch it and shape it into a long, thin rectangle.
When you're happy with that, lay in on a well oiled, medium weight baking tray.

Once the onions are soft, turn the heat off on those and, once the broccoli and sweet potatoes are a little soft, add those to the onions and toss together.

Let the veggies cool a bit and then, at that point, add them to the top of the dough, add a pinch of red pepper flakes if you like, add generous sprinkling of grated parmesan cheese, drizzle a little olive oil around the outside edge of the dough and place the tray onto the center rack of the preheated oven.

it's a good idea to spin the tray part way around half way through, it's going to take around 25 minutes to bake.

HINTS:

Roast the onions and garlic in the oven alongside the sweet potatoes and broccoli instead of sautéing them on the stovetop.
