Recipe: Roasted Sweet Potatoes with Cinnamon and Sage

SERVES:
4-6 as a side

INGREDIENTS:

2 large sweet potatoes, cut into 1/2-inch cubes
1 medium onion, peeled and diced
2 cloves garlic, peeled and minced
2 Tbs finely chopped fresh sage
1/4 tsp ground cinnamon
Salt and pepper to taste
4-6 Tbs olive oil

PROCEDURE:

Preheat the oven to 400 degrees.

It is up to you whether or not you want to peel sweet potatoes and then cut those into 3/4-inch cubes.
Add them to a large mixing bowl, add 1 medium diced onion and 2 minced cloves of garlic, 2 Tbs fresh chopped sage and 1/4 tsp ground cinnamon....add 4-6 Tbs olive oil, add salt and pepper to taste and toss to coat.

Divide that mixture onto 2 separate baking trays....so that the sweet potatoes aren't piled on top of each other...and place those trays into the preheated oven.

They will take about 25-30 minutes to roast and you'll want to stir them around a couple of times and switch the trays from top to bottom about halfway through.

HINTS:

Serve along side simply cooked chicken or pork.
