INGREDIENTS:
- 1 10-inch flour tortilla
- 1/2-1 cup crumbled Italian sausage (or any sausage you like)
- Approx. 1 cup refried beans
- 1/4 cup sliced, pickled jalapeno peppers (or to taste)
- Approx. 1/2 cup grated cheddar cheese
- 2 large eggs, fried to your liking
- Tomato salsa to taste
- Chopped ripe avocadoes for garnish (optional)
PROCEDURE:
Use a nonstick pan to saute as much crumbled sausage as you think you'll need then take that out of the pan once it has cooked through and is browned all around.
Spread a layer of the refried beans over the top of one flour tortilla...then place that into a pie dish and sprinkle the precooked sausage onto that, some canned, sliced pickled jalapeno peppers and some grated cheddar cheese and place that underneath the broiler.
As soon as that goes into the oven, use the same pan you cooked the sausage in to fry a couple of eggs. Stay with them and carefully flip them over and cook them to your liking.
When the cheese has melted and the tortilla is hot all the way through, slide it out of the pie dish onto a plate, top it with the fried eggs and then finish that with some tomato salsa and some optional chopped ripe avocado.
hints:
This meal comes together quickly so it's a good idea to have everything ready to go before you start assembling it and you'll be finishing it underneath the broiler so turn that on as well.
The reason I like to use a pie dish for each individual serving is that the tortilla curls up a bit and browns around the outside with a pie dish. Try spraying the pie dish before adding the tortilla so that it slides out easier when it is done.
