Recipe: Holiday Cheese Ball

Serves 10-12INGREDIENTS:
- 8 ounces room temperature cream cheese
- 4 ounces grated cheddar cheese
- 4 ounces crumbled blue cheese
For the coating:
- 1/3 cup dried cranberries, finely chopped
- 1/3 cup pistachios, finely chopped
- black pepper to taste (optional)
- crackers for serving
PROCEDURE:Use an electric mixer, or a mixing bowl and a rubber spatula, to combine 8 ounces of room temperature cream cheese with 4 ounces of grated cheddar cheese and about 4 ounces of crumbled blue cheese.
Once it is well combined, shape it into a nice firm ball and then place it into the refrigerator to set up a minute.
Use a food processor, or a sharp knife if you don't have a food processor, to finely chop about 1/3 cup each of dried cranberries and pistachios. Spread those out on a large plate and add a good crack of black pepper if you're using it.
The cheese only needs 10 minutes or so to set up in the fridge and then you want to roll it around in the nut mixture until it's evenly coated.
Keep this tightly wrapped in the fridge until it's time for your party, just make sure you pull it out about 20 minutes ahead of time so it softens up a bit.
HINTS:
Substitute goat cheese for the cream cheese if you like and use dried cherries and a different kind of nuts if you like.
