Recipe: Mini Apple Turnovers

SERVES:
Makes 24 mini turnovers
INGREDIENTS:
- 1 box frozen puff pastry sheets, defrosted overnight in the fridge
- 4 medium apples, peeled and thinly sliced
- 3 Tbs light brown sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 cup water
- 1-2 egg yolks whisked with a Tbs water for brushing on dough
- Cinnamon sugar for dusting turnovers before baking
PROCEDURE:
Peel, quarter, core and thinly slice the apples and then add them to a deep stainless steel pot with 2-3 Tbs light brown sugar, 1/4 tsp each of ground cinnamon and ground ginger and add about 1/4 cup water and turn the heat to high.
Use a wooden spoon to break the apples up as they're cooking and, after 5-6 minutes take them out of the pan and put them in a shallow bowl to cool down.
At this point, preheat the oven to 400 degrees and roll both sheets of defrosted puff pastry out on a floured work surface.....until they're about 1/8-inch thick rectangles....and then slice each one into thirds along the pre-existing folds and then cut each one of those crosswise into 4 equal sized squares.
When the apple mixture has cooled down, put a dollop of that in one corner of each of the squares in the row nearest to you....then brush a little egg wash in an "l" shape on two adjacent sides, fold the dry sides over those make a triangle, use a fork to seal the folded edges and then use a sharp knife to make a little slit in the top of each one.
Put them on a parchment paper lined baking tray as you go and then brush each one with a little more egg wash.
Finish with an optional sprinkling of cinnamon sugar and place the tray on the center rack of the preheated oven.
They'll take just about 15 minutes to bake and it's a good idea to spin the tray around once while it's in there.
HINTS:
Any apples will work but firmer baking apples like Granny Smith or Cortland or Golden Delicious work really well.
Make sure to take the apples off of the heat while they're still somewhat firm….you definitely don't want to end up with apple sauce.
